Santa Cookies

Updated: Mar 11, 2021

As an introduction to this article I have to convince you to bake these cookies, butttt... since you saw how good they look you must already be convinced!

Nevertheless here it goes…

For starters they are really delicious and Christmassy: here I have the Santa and Christmas tree cookies but you can make your own versions. These cookies are made with honey so they are super soft and sweet on the inside... you will love them! These treats are also great as a homemade gift for your friends and relatives: they are personal and you can really show your character when making them! Baking and frosting will be fun family time and if they turn out cute you can take pictures for your social media and brag about how good of a baker you are.

Are you convinced yet?

Good, now grab your whisk for goodness bakes!

For the cookies:

2 eggs

200 g brown sugar

300 g honey

2tsp soda

700 g flour

200 ml oil

1 tsp vanilla extract

For the frosting:

300 g cups icing sugar

2-3 tsp milk

food dye

1 tsp vanilla extract

Mix the honey with the 2tsp soda. Then whisk the eggs with the sugar and add it to the honey. After that add the vanilla extract, slowly add the oil and mix the flour in at the end.

Leave the dough on a floured surface and use a floured rolling pin to flatten it. Cut out the shapes and bake at 180 degrees for 15-20 minutes. Just to let you know that mix would make a lot of cookies!

Make sure the cookies are completely cool before you decorate them.

Beat the sugar, vanilla, corn syrup and 1 tsp milk in a bowl. Continue adding milk until you reach the desired consistency. Separate in different bowls and add the dye to make your colours.

Decorate as you wish !

Enjoy with a nice cup of tea!
